Baked Yams and Roasted Vegetables
Hello everyone, Millie here.
I hope you are all enjoying yourselves on your neck of the woods. Here it is great, I have been busy in the kitchen preparing lots of meal for the Winter which I will post later on. I sure hope you have all tried some of these Latin veganized meals, they are all super delicious.
Today it was an easy dinner for me... I made baked yams and roasted vegetables marinated with a great Latin flavor to spice up your taste buds.
In the oven, I baked some sweet yams and the night before I sliced some broccoli, Bella mushrooms, onions, and zucchini. that I had marinated in my Spanish mojito dressing which I will post the recipe next week. I put the veggies in my toaster oven at 350 degrees for 35 minutes and served it with the yams. It was FABULOUS!
