Millie's Caribbean/Apple Parfie
Doesn't this dessert look fascinating...
Let me tell you my friends this dessert is so delicious you'll want to eat the entire pan by yourself.
This is my Caribbean Coconut-Apple Parfait Pie
9x1x5 round baking pan
non dairy cream cheese
3 granny apples
oil baking spray
This dessert is fabulous. It is low in sugar, it is vegan and gluten free.
1...get a round 9x1-1/2 size baking pan. Spray it with a oil spray and set aside.
2...slice 3 granny apples like mine.
3. dip the apple slices in 1/2 glass of lemon juice and 1/2 glass of water while you prepare for the pie...this step prevents the apples from turning brown.
4...now in a mixing bowl pour in:
3/4 c. quick oats
1/2 c. flaxseed
3/4 c. unsweetened coconut
3/4 c. sweetened coconut
2 T. brown sugar
Mix well... melt in the microwave 3 large Tablespoons of non dairy butter and pour it into the
the mix....mix well and with your fingers press 3/4 of the mix into the round baking pan, just like mine...keep the rest of the mix for the layers of the pie.
5. arrange nicely your apple slices on top of the pressed crust.
6. after the apples place a nice thick layer of softened non dairy cream cheese over the entire apples, then sprinkle a layer of unsweetened and sweetened coconut and sparingly sprinkle some brown sugar.. Now put a layer of dried cranberries and raisins...repeat this entire process one more time using all your products. It is just like layering a lasagna.
It should look like this. Cover with foil or saran wrap and refrigerate for 2 hours before serving.
