Delicious Plantains Smothered In a Stir Fry Vegetables & Picadillo
As vegans we love to eat very well and healthy. We adore good food especially when it is spicy and true to Caribbean flavor.
Here is my Caribbean ripe plantains full of so a lot of flavor, surrounded by picadillo and avocados.
Here's my Recipe.
2 ripe plantains
6 clean and shredded Brussels sprouts
1 med. yellow onion- diced finely
2 of each- red & orange sweet peppers
(cleaned well and diced into small pieces)
6 cilantro sprigs-diced finely
a handful of fresh Spinach- well chopped
6 garlic cloves-mashed well
2 T. olive oil
1 sazon with culantro & achiote inside the envelope
1/4 c. Maple Grove Honey Dijon dressing
2 T. of agave or raw honey
a nice good pinch of red hot crushed pepper
salt & black pepper for taste
In a bowl pour in the olive oil, mashed garlic, diced onion & cilantro...saute on med. heat and then add the veggies and plantains, stir well, add the dressing & sweetener honey or agave and add 1/4 c. of water, then cover and let it cook on med. low for 10 minutes. Stir and cook for another 10 minutes on low and uncovered. Then remove from stove and let it cool down a bit before serving..
Recipe for picadillo
3 green onions...washed and chopped well
3 sweet peppers...orange, red and yellow...washed and diced finely
3 large roma tomatoes..washed and diced
mix all ingredients in olive oil and some salt...let it sit for 10 minutes before serving with avocados.
