Gluten Free Cranberry-Coconut Cookie Balls

 
Being a Gluten Free Vegan does not deprive me from having some delicious cookies. On the contrary, I have a variety of cookies for you to enjoy...check out my recipe file, there's over 25 recipes of my homemade cookies.
 
This week I made these scrumptious cranberry-coconut cookie balls. They are really good for parties  with family and friends because they are not to big to carry around, they are just the right size.
 
So here is my recipe and I hope you enjoy them.
 
1/2 c. gluten free flour
1-1/2 c. coconut flour
(optional rice, soy or almond flour)
 
1/2 c. quick oats
1/2 c. shredded coconut
1/2 c. dried cranberries
1 c. packed brown sugar
1/4 c. white sugar
1/2 tsp. salt
1/2 tsp. cinnamon 
1/8 tsp. ground cloves
1 tsp. 100% vanilla
2 T. non dairy butter
2 T. Olivio coconut spread
&
 some coconut milk
 
1. Mix all the dry ingredients together in one bowl, then mix all the wet ingredients (except the coconut milk) in another bow...make sure to melt the butter & the coconut spread together first before poring it into the bowl. Then gather all the ingredients together in one bowl.
 
On a greased baking pan scoop out the cookie mix with a cookie scooper 1 inch apart. The cookie scooper allows all the cookies to come out the same size. Bake at 325 degrees for about 12 to 15 minutes. Cool and enjoy.
 
They were delicious with some good cold non-dairy milk.
