Life has finally started to settle down here at home after the holidays. The entire house has been thoroughly cleaned and organized. Since that is all done now I can devote more time to cooking good meals since the freezer is almost emptied out from lots of meals that were pre-made before the winter season began.
This last week I made one of my favorite dinners...baked beans, breaded Mexican tofu, baked sweet Batata (a Spanish root like sweet yams) and a grand salad made of chopped romaine lettuce, spinach leaves, carrots, peas & French green beans drizzled in olive oil.
