Gluten Free Vegan Honey Bread
One of my favorite sweet spices is honey. I often get organic honey from Penton's Market, a local family owned market that caters to fresh picked fruits & vegetables and some good Amish & Organic food and spices.
This week I was in the mood of eating some sweet toast, so I made my moist and yummy honey bread. It was delightful with a spread of non dairy gluten free cream cheese. I really want to share with you my recipe, so I hope you like it.
4 c. gluten free flour
1 c. brown sugar
1 tsp. salt
1 T. cinnamon
1/2 tsp. ground cloves
1 T. baking soda
1 c. honey
1/2 c. non dairy butter (melted)
2 T. cooking oil
Non dairy milk
First warm up your oven at 370 degrees. Then mix all the dry ingredients together in a mixing bowl, mix well and then mix into dry ingredients all the liquid ingredients except the milk. *** use 1/2 c. of the cup of honey, save the other half for the split topping of the bread.
Make sure to taste the mixture in case you want to add some more sugar for a sweeter taste. Also if your mix is a bit dry add slowly small amounts of your non dairy milk until your mix has a nice firm consistency but not to soft.
Grease your baking bread pan with a baking spray and pour in your bread mixture. Bake for 30 minutes, then take the bread out of the oven and with a sharp knife slice the top center of the bread vertically (the long way) and pour into the sliced center the remaining honey. Bake for another 10 to 15 minutes or until golden brown. Remove from oven and let it cool. Slice and toast it for a crisper crunch or eat soft (untoasted). I like non dairy gluten free cream cheese on mine...it is delicious.
