A Quick Yummy Salad




A refreshing cold salad is always a welcome treat to any vegan.
I did not want to cook on Friday so I mixed together some yummy veggies with some tofu & garbanzos. This sweet and delicious quick salad was so good I ended up eating the entire bowl through the day. I hope you enjoy it as much as I did.
Salad:

2 ripe avocados (chopped)
2 or 3 large tomatoes (chopped)
1 can of garbanzo beans (rinsed well)
1/2 block of extra firm tofu (diced)


Dressing:

1/3 c. olive oil
1/3 c. apple cider vinegar
1/3 c. of pancake syrup or agave
1/8 tsp. salt
