Garden Style Pasta

Pasta is another favorite of mine. I make pasta often and this week I made my pats with some fresh garden vegetables. The dish is great and I hope you enjoy it.

1 box whole grain wheat spaghetti
1 c. chopped kale
1 c. diced eggplant
1 c. chopped cabbage
1 leek stem-chopped finely
1/2 c. vegetable broth
1 yellow onion- diced
1 green bell pepper-diced well
6 fresh garlic cloves-mashed well
1/3 c. of olive oil
1/2 tsp. salt
1/2 tsp. black pepper
1 tsp. garlic powder
2 envelopes of Jamon (found in any Spanish store)
2 tablespoons of non dairy butter

Cook your spaghetti, drain and set aside. In a large pot simmer the onions, green pepper & garlic with  the olive oil. Then add all the veggies, butter and all the spices. Set heat on med. low and let it simmer for 12 minutes covered. Stir in the spaghetti, stir well and cook for another 10 minutes uncovered. Stir well and serve. Enjoy.
