Fruity Summer Salad
Hi everyone, I hope the weather is wonderful on your side of town...it is super beautiful here 70 to 90 degree weather....ENJOY!
My Easy Summer Meals are back...Yep, here I am making some more Summer dishes for all of us to enjoy.
Thanks to Woman's World Magazine our first Summer Meal for 2011. This salad is refreshing and delicious.
Here's the recipe...
1 package of non dairy cream cheese (softened)
1 non dairy vanilla or plain yogurt
(I used Coconut vanilla and it was fabulous)
1/2 cup of honey
2 tablespoons of lemon juice
1 teaspoon of grated lemon peel
2 cups cooked elbow macaroni or long rice (cooled)
(I used wheat elbow macaroni)
4 fresh peaches or nectarines, pitted and chopped finely
1 cup "tibit" pineapple pieces
1/2 cup celery (diced finely)
3/4 cup raisins
1/8 teaspoon of sea salt
1/2 teaspoon celery seeds
2 tablespoons of Maraschino cherry juice
1/2 cup chopped pecans
In a large mixing bowl combine the first 3 ingredients, beat well until smooth. Add the macaroni or rice and then add all the other ingredients except the pecans, mix well and cover. well refrigerate for 4 to 6 hours. Just before serving stir in the pecans. Serves about 6 people.
