TVP Stir Fry
That's the only way I can identify this dish...it was delicioso.
1/3 c. olive oil
1 envelope of jamon
5 mashed garlic cloves
6 sprigs of fresh cilantro ...chopped finely
1 tsp. adobo
1/2 tsp. black pepper
1 yellow onion...finely chopped
3 TB. non dairy butter
1 c. lentils
1 c. potatoes...cut in small dice pieces
1 red pepper...cut finely
1 green bell pepper...cut finely
1/2 tub of firm tofu...cut in small cubes
1 c. cabbage...cut very finely
1 large stem of Kale...chopped finely
1 c. broccoli...cut very finely
2 shredded carrots
1 c. TVP
3/4 vegetable broth
In a large Wok pour in your olive oil and all the spices. Simmer on low for about 5 minutes...saute lightly and then add all remaining ingredients and simmer on low with a lid on it for 10 minutes. Stir lightly and simmer for another 10 minutes. Taste for salt, Serve hot over brown rice.
