Pollo Guisado Served over Rice, Avocados, Tomatoes & Zucchini


Pollo Guidado is a typical chicken dish served with rice in Puerto Rico. It is one of the most tasteful (in spices) dishes from our island. It is usually made with fresh chicken but I veganized it and to tell you the truth I could not see or taste the difference. I used Seiten chicken to make my pollo guisado and here is my recipe still using the typical spices and great taste from our Spanish Heritage.

1 pkg. seitin chicken
3 medium size potatoes or 1 large one
 ( cut in medium size quarters)

1 large sliced yellow onion
5 garlic cloves very well mashed
6 spigs of cilantro
(chop finely)

1/3 c. tomato sauce
1/3 c. Welch's grape juice
1 envelope of Sazon
3 tablespoons of homemade sofrito
(recipe in my recipe file)

2 envelopes of Jamon
 (artificial ham flavoring)

1/8 tsp. black pepper
1/8 tsp. red crushed peppers
2 bay leaves
1/3 c. olive oil
4 or five diced olives
1/2 tsp. salt
1 T. minced garlic
1/2 of finely diced green or red pepper
2 c. vegetable broth 1 c. water

In a nice large cooking pan saute the sofrito in the olive oil with all the spices.

Once you have sauteed it for about 5 minutes add the potatoes and chicken..

Then saute for 3 minutes, stir softly and then add the rest of the ingredients. Let it boil for about 10 minutes then taste the broth to see if you wish to add more salt or sofrito for a more stronger boost of flavor. Add gently and let it boil until a nice thick gravy appears or until potatoes are cooked

Serve over rice with chopped avocados, tomatoes & zucchini.
