"Pastelillos"...Puerto Rico's No. 1 Fried Empanadas

I don't know what it is but throughout the United States these flour & meat fried empanadas are a big seller and a hit with almost every American. In Puerto Rico these fried empanadas called "Pastelillos" can be found anywhere throughout the island and they are sold and made by almost every Puerto Rico there.  The filling can vary from meat to seafood, but no matter what it contains...Pastelillos are the
 no. 1 fried food that is sold in the island and at any Spanish food court where it is available.

As a vegan I have modified the meat contents but not the recipe. So here is my recipe for my vegan ground round Cheddar cheese Pastelillos.  I also made some for my son and his best friend with pork and they ate all of those.

Here is my recipe and I hope you enjoy them.

Here they are ready to be fried.

First the meat:

Use 1 package of Vegan Ground Round
1 red pepper (diced in small pieces)
1 med. onion (diced in small pieces
1/2 tsp. salt
1/8 tsp. red crushed peppers
5 garlic cloves (mashed well)
1 envelope of Sazon
1/8 tsp black pepper
1 tablespoon of olive oil

you can put vegetables inside them instead of the meat...use all the ingredients you would use to make and spice up the meat, but alternate  the veggies instead of the meat. It comes out delicious.

Saute the meat in all these ingredients on low until the meat has acquired the flavor. Taste to see if you feel it needs more salt or a dash of Adobo for more flavor. Then set aside. 

Second the dough mix:

In a small bowl empty out 1 envelope of dry yeast and 1 c. warm water (almost hot)...mix well and set aside.

In a large bowl pour in:

1-1/2 c. gluten free flour
1-1/2 c. garbanzo flour
2 T. shortening
1 tsp. salt

Then once you mix these ingredients well add to it the yeast blend slowly and mix well. Add some more flour as you knead until the dough is no longer can use a bit more shortening also if needed. Then roll out your dough into a golf size balls.  Then with a rolling pin roll out each ball on a floured surface and then cut out a circle using a small salad plate.

Fill the center with meat and a bunch of vegan cheddar cheese. Roll the circle onto its side, press in the edges down and then with a fork press them down again to seal the meat and preventing it from coming out while frying.

Then fry them in vegetable oil. Once they are golden brown set them on top of paper towels to absorb the oil...Enjoy...

 Remember they can be filled with many different things your family loves...I made some veggie ones  with mozzarella cheese...and they were fabulous.

  4. I really need to learn how to fry..I've only made empanadas once and they were baked. These look a lot better than mine!

  6. Anonymous, pour in the water slowly and make sure it is warm, almost hot. Make sure the dough is like a bread dough consistency before you start cutting out the discs....good luck.
