Christmas Cookie Extravaganza...Post 10...Snowy Shortbread Squares and Giveaway
Merry Christmas, Happy Holidays & Happy Kwanzaa Everyone
It is that time of the year again, all of you are busy baking, shopping, wrapping and running around with your head cut off trying to get so much done. I hope in some small way I can help with all my cookie recipes. They are all easy to make and very festive.
Today I am posting my Snowy Shortbread Squares. I love this recipe and it is the easiest recipe I have ever made. I hope you like them. When you are cutting them cut them in small squares...I cut them bigger for you to see them better. Enjoy.
1 cup non vegan butter (softened)
1 cup packed brown sugar
1/4 cup egg replacement
1 tsp. vanilla2 cups flour
1/4 tsp. salt
1 jar peanut butter
2 bags of non dairy chocolate chips
In a mixing bowl cream butter and brown sugar together. Add vanilla and mix well. In another bowl mix egg replacement, salt & flour together then combine both bowls together and mix well. Press your contents into an ungreased baking pan (15 inch x 10x1 in.). Bake until golden brown ...15 to 18 minutes.
Immediately remove them from the oven and smear chocolate chips and peanut butter together as they melt.Let it stand for about 10 minutes and top it with coconut flakes and red & green sprinkles.
Once they cool well, cut into square...makes about 3 dozen
***You can add any preserve flavor you like to the baked squares once your peanut butter and chocolate has settled and before sprinkling your coconut flakes and sprinkles. Another tip is food coloring your coconut flakes in red or green...let them dry very well before adorning your squares.
