Apple Sauce Gingerbread Cookies
I have been a very busy lady in the kitchen baking up a storm. The beauty of it all is that my neighbors love getting baked goods almost everyday. Its great when you have 11 apartments on your floor...it becomes a way of getting them out of my house. YEAH!!!!
I hope you all may enjoy my Apple Sauce Gingerbread Cookies.
Here is my recipe...
4 c. all purpose flour
2 tsp. ground cinnamon
2 tsp. ground ginger
1 tsp. baking soda
1/2 tsp. salt
1/4 tsp. ground nutmeg
1/2 c. non-dairy butter (softened)
1 c. sugar
1/3 c. light golden molasses
1 c. Mott's natural apple sauce
In one bowl sift together flour, ginger, cinnamon, baking soda, salt and nutmeg.
In another bowl with an electric mixer at high speed mix together butter, sugar & molasses until it becomes creamy. Blend in apple sauce and then slowly blend in your dry ingredients slowly as you stir it all in. After it is all mixed together cover and chill dough for several hours or overnight.
Preheat oven to 375 degrees. On a floured surface roll dough out to 1/8 thickness with lightly floured rolling pin. Using holiday cookie cutters or gingerbread man cookie cutter, cut out your shapes. Place your cutouts on a greased baking pan. Bake 10 to 12 minutes, remove them from the baking pan and cool them on a cooling cookie rack.
2 c. powdered sugar
1 T. softened butter
1/8 tsp. of vanilla extract
While mixing your ingredients you may need some water add a 1/2 tsp. at a time until you get a nice creamy batter. If you need more powdered sugar then ad a 1/2 a teaspoon at a time.
Separate your mixture in small cups and add food coloring with the colors you desire to decorate your cookies.
Makes about 2 1/2 dz.
My cookies did not last long.
