Millie's Spicy Vegetarian Noodles

It was soooo good!


One day last week I was extremely hungry after a full day of shopping. After arriving home I chopped all my veggies and cooked some wheat noodles & spaghetti. I smothered my pasta in vegetables and spices, creating a Spanish flavorful dish that was absolutely delicious. So here is my Caribbean version of how a spicy vegetarian pasta is made...Puerto Rican style. Enjoy!

1/2 package wavy wheat noodles
1/2 package wheat spaghetti
1 package vegan bacon...finely chopped
1 can kidney beans
1/3 c. olive oil
2 envelopes Jamon...photo on file
1 envelope Sazon...photo on file
6 garlic cloves...Mashed well
1/2 tsp. salt
1/8 tsp. black pepper
1/8 tsp. red crushed peppers
1/4 tsp. dried oregano
3 tablespoons sofrito...recipe on file
3 c. shredded cabbage
1/2 c. thin sliced red peppers
1/2 c. thin sliced green peppers
1/2 c. yellow peppers
15 sprigs well chopped cilantro
1 well chopped large yellow onion
1 c. tofu...chopped in small pieces
1-1/2 c. vegetable broth

Pot 1...boil your pasta until done.

Pot 2...pour in olive oil, mashed garlic, cilantro, sofrito & bacon...saute on med heat. Add all your peppers, onions & tofu...saute & simmer for 5 minutes, add cabbage, beans & all your dried spices, saute well & simmer for more 5 minutes, then add your noodles & vegetable broth. Cook on med. heat for 20 minuets or until the vegetable broth is completely dried out...serve with your favorite bread or crackers. It is delicious.
