Strawberry-Banana Muffins





These muffins were a great hit with my friends. They are fluffy and filled with strawberries & bananas. This recipe can be replaced with blueberries, chocolate chips, apple slices, raspberries or black berries. Also add some walnuts or other grinded nuts to take it up a notch. Either way they are great. I hope you like them as much as we all did.


3 ripe bananas
2 cups diced strawberries
¼ c. non-dairy butter...melted
1/2 c. non-dairy sour cream
½ tsp. Almond oil
1 ¼ c. sugar
1/4 c. rice milk
3 cups flour
1 tsp. Salt
1 tsp. baking soda

Bowl 1....In a large bowl mash well your ripped bananas, add diced strawberries, melted butter, almond oil, sour cream, rice milk and sugar. Mix well.


Bowl 2....Stir flour, baking soda & salt together well. Add slowly flour mixture to bowl 1 contents, mix well until it is evenly mixed...do not beat. Spray muffins pans with Pam spray, add mixture to pans halfway full or a bit more for bigger muffins. Bake at 360 for 35 to 40 minutes or until golden brown. Poke a toothpick into muffin if a dry toothpick comes out it is done. If it comes out moist give the muffins an extra 5 minutes.


Makes 16 muffins, serve with Vegan cream cheese or butter...DELICIOUS!!!.
